Vegan Pad Thai Recipe

I knew I needed to make a Vegan Pad Thai Recipe after we ordered some take out and got the Vegetarian Pad Thai without much thought and the next morning, we swore we had gotten food poisoning from it. Honestly, the fish sauce, vegan or not, isn’t necessary what so ever and I am here to prove it!

Savory Chickpea Curry – Vegan

Curry is something I had seen so much and always said I wanted to try, but somehow never actually tried it until recently. I learned that there are many different ways you can make it. You can have it red or yellow, spicy or rich in flavor, with so many vegetables and bean/legume varieties it’s unreal. I would be lying if I didn’t say that it intimidated me when I first tried my hand at making it.

Ultimate Vegan Fried Rice

A couple of years ago for Mothers Day I asked to go to Atlanta to a full vegan restaurant that I had been hearing about. To make a long story short, we sat there with a toddler and 5 month old for an hour and a half while people came in, got and ate their food, and we only got hot water. Of course we asked what was going on and were told a simple “I don’t know”. After a while, we left and I was in full fledged tears because it was now 6:30pm on Mother’s Day and I knew it’d be impossible to get in somewhere else. Not to mention, I had a cranky baby and a hungry toddler as well. We googled and found a close vegetarian Chinese restaurant and gunned it there; where this Ultimate Vegan Fried Rice was inspired from!

Mini Tofu Pot Pies – Vegan

I will start off with an honest and embarrassing story. I made these Mini Tofu Pot Pies with pre-made pie crust several times before I noticed the lard in it! I had quickly checked the ingredients, no eggs or dairy, and got it. Never did I ever even think they would have lard in pie crust (obviously)!
I only mention it, partly, so you don’t make the same mistake, but mostly to let you know that even after 3 years as a vegan, I still make mistakes sometimes (like the other time when i bought frozen french fries with cows milk as the last ingredient *major eye roll*). You can’t let mistakes hold you back from your passion and purpose is my life lesson for you today πŸ™‚

Lentil Shepherds Pie

Lentil Shepherds Pie. Lentils were something I had not even heard of (along with the term “legume”) years ago, but now they are a staple is our pantry because, not only are they a nutritious super food, cheap and delicious, they are so easy to cook and don’t require the preparation and soaking like beans. Lentils are high in fiber, protein, and iron and are great for battling some of America’s biggest health epidemics, such as obesity, diabetes, heart disease, high cholesterol, IBS, and even fatigue.
