Fun fact : I’ve never actually had clam chowder, so when Will requested for me to make an Flavorful Vegan “Clam” Chowder one day, I wasn’t sure how I’d pull it off, but I was determined. Of course I’m not going to go eat clam chowder in the name of science, so I looked at some recipes for clam chowder and read reviews, then made a few different batches for the family to get an idea on how it needed to taste. You’re going to have to trust them that it taste like it should, but I can at the very least attest that it is DELICIOUS!

Fried Oyster Mushrooms – Vegan

This is one of our new favorites, for sure! Fried Oyster Mushrooms! We had it twice just last week! I have no doubt in my mind that it’ll blow you away too! I used oyster mushrooms because they are the perfect shape and texture for a “fried chicken” copycat. They are big and hearty, but thin enough that they aren’t “mushroom-y”, if that makes sense. The breading is delicious and crunchy and just to die for!

This recipe started off by Will requesting a vegan version of an Arby’s French Dip and Swiss; one of his favorite fast food meals from our pre-vegan days, but I’m not sure it qualifies as a copy-cat recipe because I used mozzarella and a onion bun, but it is surely inspired by it and is even more delicious!
