Ultimate Vegan Banana Bread

Not to toot my own horn here, but I have never in my life had a banana bread this good! I have worked and worked on this recipe to have it just perfect and I have no doubt that I have accomplished just that! You will not be disappointed! Not to mention, its super simple with only 10 ingredients (well, 11 with the walnuts.).

Vegan Buttermilk Biscuits

This is going to be a quick and easy, but perfected buttermilk biscuit recipe. These things are so simple, with just a few ingredients, but are better than any other vegan biscuits I’ve ever had! I have to give credit where it’s due. This is actually Will’s recipe. Whenever we have these, I always make him make them, but he taught me this time. Probably so I’ll start doing it, but whatever, lol. Continue reading

Mushroom Roll Ups with Roasted Vegetables

Most of my recipes come from food from my pre-vegan days. This week’s recipe is inspired by Zoës Kitchen steak roll ups with their roasted vegetables and dipping sauce, one of my very favorite meals from before becoming vegan! Mushrooms are such a great steak alternative, because they soak up flavor so well, but also have a steak-like texture. Continue reading

Vegan Pumpkin Egg Nog

Egg nog has always been one of my holiday favorites, but I haven’t found a good one or a great recipe since being vegan. I’ve made a few, but they are never the right texture. Egg nog is thick and creamy and although some of the ones I’ve tried have tasted great, they have never gotten the creaminess quite right. Well, I figured it out you guys! Continue reading

Vegan Mexican Rice

One of my, not so sweet, cravings this pregnancy has been Mexican food. Any and all Mexican food, really! Today I actually had my 32 week pregnancy appointment and you know where we went after? You guessed it! Mexican! So, I thought what better recipe to post than my go-to Mexican rice recipe? It’s rather simple, and sooooo good and filling! We actually make an entire meal out of just this recipe itself sometimes. Continue reading

Roasted Pumpkin Seeds

It has been one of those weeks. You know, when things just keep going wrong as soon as you fix the last problem. Yeah. We’ve managed and I haven’t lost my mind yet, but I haven’t really been focused on cooking and truthfully, Thursday just snuck up on me. Don’t you worry your little tails off though. I still have a recipe for you this week!  Continue reading

Vegan Eggplant Parmesan

Okay, THIS recipe has been anticipated and requested by so many that I had to get it up for you guys (and it was a great excuse to have it for dinner)! It’s seriously one of my favorite meals and even my meat-loving brother loves it! You can’t go wrong here!

Eggplant is one of those things that is hard to get just right. You have to get the bitterness out of it, but you don’t want it chewy or soggy. You have to find that sweet spot, right in the middle. Really it was a trial and error thing for me, but this recipe has it perfected, I swear by it!  Continue reading

Healthy Vegan Babies?

This will be a bit of a rant post, so bare with me. It’s something that has been weighing on me for a little while now and this is just a way to get it out and possibly help others not feel alone if they, too, are getting similar comments. If you’re only here for food, don’t worry! I have some great things coming!

Although most people have been great to us about our veganism and understand that we, as a family, are only doing what we feel is best, not everyone has. If someone has something negative to say, it doesn’t usually bother me in the least. I find it a perfect time to help educate others and be an advocate for what I feel like has been one of the best decisions I’ve ever made; for myself and my family. I tell people all the time that it truly makes me feel wonderful to spread the message when and however I can. It’s the sole reason I started this blog.  Continue reading

Savory Vegan Mushroom Melt

This recipe started off by Will requesting a vegan version of an Arby’s French Dip and Swiss; one of his favorite fast food meals from our pre-vegan days, but I’m not sure it qualifies as a copy-cat recipe because I used mozzarella and a onion bun, but it is surely inspired by it and is even more delicious!

Why WE Don’t Drink Other Animal’s Milk

I am not a doctor nor do I have a degree in nutrition. I am just a mommy who is passionate about animals and living a healthy lifestyle.

When my daughter turned 1, the big topic of conversation became about milk. If we were vegan, she could never thrive without whole cow’s milk.  I mean, where on this big green earth could she get her calcium, proteins, vitamin D, and fats from? She needed these things to survive and grow healthy and strong. Well, my friends, I am here to tell you a secret… not only do toddlers NOT NEED cow’s milks to grow into healthy children and adults, they don’t NEED ANY milk! Continue reading
