Vegan Pad Thai Recipe

I knew I needed to make a Vegan Pad Thai Recipe after we ordered some take out and got the Vegetarian Pad Thai without much thought and the next morning, we swore we had gotten food poisoning from it. Come to find out, it’s made with fish sauce. I know, I know, rookie mistake, but also why do they call it vegetarian if it is made with fish sauce? Then, all the recipes I found online used a vegan fish sauce that I just couldn’t find anywhere around here… so here we are! Honestly, the fish sauce, vegan or not, isn’t necessary what so ever and I am here to prove it!

Navy Bean Verde Soup

Β

This Navy Bean Verde Soup is so filling and delightful, with just enough kick (you can always add extra verde/seasonings if you’d like a harder kick!) to satisfy those Mexican food cravings! This is the perfect soup if you’ve got a cold, but still yearning for some Mexican flavor! The spice will aid in opening up those nasal passages, while the warm, thick soup will feel like heaven on a sore throat.

Not only is this soup extremely delicious, its also SO EASY! Continue reading

Vegan Cornbread

I will start this by saying that this is not sweet cornbread. Will does not like sweet cornbread, and would probably prefer if I didn’t add any sugar to it, BUT you can easily just add an extra tbsp or 2 to make it that southern, sweet, cornbread, if that’s what you like. The extra sugar won’t hurt anything and the cornbread will come out the same, except sweeter!
On that note though, this has been my staple cornbread recipe for a while now. I never measured anything before I decided I just had to share this recipe for the world. So, I made an excuse to make these with dinner so I could get all the measurements, just for you!Β  Continue reading

Vegan Mexican Rice

One of my, not so sweet, cravings this pregnancy has been Mexican food. Any and all Mexican food, really! Today I actually had my 32 week pregnancy appointment and you know where we went after? You guessed it! Mexican! So, I thought what better recipe to post than my go-to Mexican rice recipe? It’s rather simple, and sooooo good and filling! We actually make an entire meal out of just this recipe itself sometimes. Continue reading

Vegan Eggplant Parmesan

Okay, THIS recipe has been anticipated and requested by so many that I had to get it up for you guys (and it was a great excuse to have it for dinner)! It’s seriously one of my favorite meals and even my meat-loving brother loves it! You can’t go wrong here!

Eggplant is one of those things that is hard to get just right. You have to get the bitterness out of it, but you don’t want it chewy or soggy. You have to find that sweet spot, right in the middle. Really it was a trial and error thing for me, but this recipe has it perfected, I swear by it!Β  Continue reading
