Lentil Shepherds Pie

Lentils were something I had not even heard of (along with the term “legume”) years ago, but now they are a staple is our pantry because, not only are they a nutritious super food, cheap and delicious, they are so easy to cook and don’t require the preparation and soaking like beans. Lentils are high in fiber, protein, and iron and are great for battling some of America’s biggest health epidemics, such as obesity, diabetes, heart disease, high cholesterol, IBS, and even fatigue.

5 Minute Chickpea Salad

Vegan chicken salad? It’s called chickpea salad! And if you know how to make chicken salad, I bet your bottom dollar that know how to make chickpea salad and I also bet that you’ll LOVE IT! Not only is it a delicious side or picnic dish with 0 cholesterol, it only takes about 5 minutes to make (and devour)! Continue reading

Vegan Hushpuppies

I am going to be honest… this is a recipe that I usually would just whip up on a limb and it always turned out great. When we I decided to make it a recipe and measured everything, it seemed impossible to get just right. Isn’t it funny how life works that way? I honestly figured this would be one of the simplest and quicker recipes, but turned out to give me more trouble than I’m sure hush puppies are typically worth. But after making a million horrendous batches (after never having a bad batch before that), I couldn’t give up. They were daggum’ HUSHPUPPIES for that matter. Surely I was going to figure out what I was doing wrong.  Continue reading

Loaded Vegan Sausage Biscuits and Gravy

If you’re from the south, you likely love sausage gravy, over some delicious buttermilk biscuits. If you’ve ever been to a Huddle House, maybe you’ve even had their loaded biscuits, which are quite similar to these… except these are vegan (and possibly even yummier)!

This is actually a few separate recipes in one. You can use the pieces of them for other things, if you’d like, but this one is a true southern staple! Continue reading

Vegan Buttermilk Biscuits

This is going to be a quick and easy, but perfected buttermilk biscuit recipe. These things are so simple, with just a few ingredients, but are better than any other vegan biscuits I’ve ever had! I have to give credit where it’s due. This is actually Will’s recipe. Whenever we have these, I always make him make them, but he taught me this time. Probably so I’ll start doing it, but whatever, lol. Continue reading

Mushroom Roll Ups with Roasted Vegetables

Most of my recipes come from food from my pre-vegan days. This week’s recipe is inspired by Zoës Kitchen steak roll ups with their roasted vegetables and dipping sauce, one of my very favorite meals from before becoming vegan! Mushrooms are such a great steak alternative, because they soak up flavor so well, but also have a steak-like texture. Continue reading

Vegan Pumpkin Egg Nog

Egg nog has always been one of my holiday favorites, but I haven’t found a good one or a great recipe since being vegan. I’ve made a few, but they are never the right texture. Egg nog is thick and creamy and although some of the ones I’ve tried have tasted great, they have never gotten the creaminess quite right. Well, I figured it out you guys! Continue reading

Vegan Mexican Rice

One of my, not so sweet, cravings this pregnancy has been Mexican food. Any and all Mexican food, really! Today I actually had my 32 week pregnancy appointment and you know where we went after? You guessed it! Mexican! So, I thought what better recipe to post than my go-to Mexican rice recipe? It’s rather simple, and sooooo good and filling! We actually make an entire meal out of just this recipe itself sometimes. Continue reading
