IT’S FALL!

I even had my mom send me her famous pumpkin pie recipe! It’s not vegan, but I intend to make it that way very soon and of course, share it with you all as soon as it’s perfected!

As soon as Ryli Ann gets up from her nap (because I wouldn’t dare do it without her!), we’re gonna dig into this small pumpkin and see if I can turn it into good puree… and roast up the seeds, obviously!

Vegan Eggplant Parmesan

Okay, THIS recipe has been anticipated and requested by so many that I had to get it up for you guys (and it was a great excuse to have it for dinner)! It’s seriously one of my favorite meals and even my meat-loving brother loves it! You can’t go wrong here!

Eggplant is one of those things that is hard to get just right. You have to get the bitterness out of it, but you don’t want it chewy or soggy. You have to find that sweet spot, right in the middle. Healthy Vegan Babies?

This will be a bit of a rant post, so bare with me. It’s something that has been weighing on me for a little while now and this is just a way to get it out and possibly help others not feel alone if they, too, are getting similar comments. If you’re only here for food, don’t worry! I have some great things coming!

Although most people have been great to us about our veganism and understand that we, as a family, are only doing what we feel is best, not everyone has. If someone has something negative to say, it doesn’t usually bother me in the least. I find it a perfect time to help educate others and be an advocate for what I feel like has been one of the best decisions I’ve ever made; for myself and my family. I tell people all the time that it truly makes me feel wonderful to spread the message when and however I can. It’s the sole reason I started this blog.  Continue reading

Vegan Cheesy Italian Pasta with Roasted Tomatoes and Broccoli

I remember coming up with this recipe on a day that I just didn’t plan anything and used whatever I could find around the house and it was a hit! (I know it’s hard to believe, but that doesn’t always happen.) I love when food just comes together so easily! I just adore pasta of all sorts, so we often have some on hand, and I had leftover cherry tomato and broccoli from earlier on in the week that I needed to use up. Everything else in this recipe are things I always keep stocked in the house.

Vegan Almond Joys

I know, anoooother sweets recipe? C’mon Amanda. Aren’t we trying to be more healthy?
Well, you’ll be totally over it when you try these vegan versions of the candy Almond Joy!  You can thank me later. 🙂 One of my favorite candy bars from before becoming vegan was an Almond Joy, for sure, and I just loooove coconut.
