Vegan Eggplant Parmesan

Okay, THIS recipe has been anticipated and requested by so many that I had to get it up for you guys (and it was a great excuse to have it for dinner)! It’s seriously one of my favorite meals and even my meat-loving brother loves it! You can’t go wrong here!

Eggplant is one of those things that is hard to get just right. You have to get the bitterness out of it, but you don’t want it chewy or soggy. You have to find that sweet spot, right in the middle. Vegan Cheesy Italian Pasta with Roasted Tomatoes and Broccoli

I remember coming up with this recipe on a day that I just didn’t plan anything and used whatever I could find around the house and it was a hit! (I know it’s hard to believe, but that doesn’t always happen.) I love when food just comes together so easily! I just adore pasta of all sorts, so we often have some on hand, and I had leftover cherry tomato and broccoli from earlier on in the week that I needed to use up. Vegan Almond Joys

I know, anoooother sweets recipe? C’mon Amanda. Aren’t we trying to be more healthy?
Well, you’ll be totally over it when you try these vegan versions of the candy Almond Joy!  You can thank me later. 🙂 One of my favorite candy bars from before becoming vegan was an Almond Joy, for sure, and I just loooove coconut.

Becoming Vegan

The beginning of September will mark ONE YEAR for our family as vegans. It seems like it has been so much longer. It’s been fun and the best decision I’ve made, seriously. Perfect Vegan Brownies in Only 30 Minutes!

You didn’t think I’d start off with a big, healthy salad or something, did you? I hope not, because it’s brownies ALL THE WAY! Being pregnant has had my sweet tooth in overdrive. I won’t lie to you, I was just buying the Duncan Hines box of brownies and substituting the eggs with a flax egg and calling it a day. Why WE Don’t Drink Other Animal’s Milk

I am not a doctor nor do I have a degree in nutrition. I am just a mommy who is passionate about animals and living a healthy lifestyle.


When my daughter turned 1, the big topic of conversation became about milk. If we were vegan, she could never thrive without whole cow’s milk.  I mean, where on this big green earth could she get her calcium, proteins, vitamin D, and fats from? She needed these things to survive and grow healthy and strong. Healthy Vegan Babies?

This will be a bit of a rant post, so bare with me. It’s something that has been weighing on me for a little while now and this is just a way to get it out and possibly help others not feel alone if they, too, are getting similar comments. If you’re only here for food, don’t worry! I have some great things coming!

Although most people have been great to us about our veganism and understand that we, as a family, are only doing what we feel is best, not everyone has. If someone has something negative to say, it doesn’t usually bother me in the least. I find it a perfect time to help educate others and be an advocate for what I feel like has been one of the best decisions I’ve ever made; for myself and my family. Bangin’ Black Bean Burgers

Of course, I knew I needed a burger recipe on this blog and what better way to start off than sharing my famous black bean burger recipe. Well, it’s famous to my family, and hopefully now to yours too! I use black beans, beef-less ground, and mushrooms to really pull that “burger” texture off. I feel like that’s so important in a vegan burger; having the right texture and holding together well.
