Vegan Cornbread

I will start this by saying that this is not sweet cornbread. Will does not like sweet cornbread, and would probably prefer if I didn’t add any sugar to it, BUT you can easily just add an extra tbsp or 2 to make it that southern, sweet, cornbread, if that’s what you like. The extra sugar won’t hurt anything and the cornbread will come out the same, except sweeter!
On that note though, this has been my staple cornbread recipe for a while now. I never measured anything before I decided I just had to share this recipe for the world. So, I made an excuse to make these with dinner so I could get all the measurements, just for you!Β  Continue reading

I’M BACK Y’ALL

….hey there! I could write up a page full of excuses on why I haven’t posted in a while, but I know you don’t care. What matters is I’M BACCCCK! Continue reading

Loaded Vegan Sausage Biscuits and Gravy

If you’re from the south, you likely love sausage gravy, over some delicious buttermilk biscuits. If you’ve ever been to a Huddle House, maybe you’ve even had their loaded biscuits, which are quite similar to these… except these are vegan (and possibly even yummier)!

This is actually a few separate recipes in one. You can use the pieces of them for other things, if you’d like, but this one is a true southern staple! Continue reading

Vegan Buttermilk Biscuits

This is going to be a quick and easy, but perfected buttermilk biscuit recipe. These things are so simple, with just a few ingredients, but are better than any other vegan biscuits I’ve ever had! I have to give credit where it’s due. This is actually Will’s recipe. Whenever we have these, I always make him make them, but he taught me this time. Probably so I’ll start doing it, but whatever, lol.

Mushroom Roll Ups with Roasted Vegetables

Most of my recipes come from food from my pre-vegan days. This week’s recipe is inspired by ZoΓ«s Kitchen steak roll ups with their roasted vegetables and dipping sauce, one of my very favorite meals from before becoming vegan! Mushrooms are such a great steak alternative, because they soak up flavor so well, but also have a steak-like texture.

Vegan Pumpkin Egg Nog

Egg nog has always been one of my holiday favorites, but I haven’t found a good one or a great recipe since being vegan. I’ve made a few, but they are never the right texture. Egg nog is thick and creamy and although some of the ones I’ve tried have tasted great, they have never gotten the creaminess quite right. Well, I figured it out you guys! Continue reading

Vegan Mexican Rice

One of my, not so sweet, cravings this pregnancy has been Mexican food. Any and all Mexican food, really! Today I actually had my 32 week pregnancy appointment and you know where we went after? You guessed it! Mexican! So, I thought what better recipe to post than my go-to Mexican rice recipe? It’s rather simple, and sooooo good and filling! We actually make an entire meal out of just this recipe itself sometimes. Continue reading

Roasted Pumpkin Seeds

It has been one of those weeks. You know, when things just keep going wrong as soon as you fix the last problem. Yeah. We’ve managed and I haven’t lost my mind yet, but I haven’t really been focused on cooking and truthfully, Thursday just snuck up on me. Don’t you worry your little tails off though. I still have a recipe for you this week!Β  Continue reading

To My Daughter, Before Her Brother Arrives

To my daughter, my best friend, my whole heart, my pride and joy, the one who already has me in tears writing this, just one sentence in…

Vegan Milky-Way Ice-cream Bars

So, this recipe is so easy, and absolutely scrumptious! My favorite, pre-vegan candy bar was a Milky-Way and I have been craving ice-cream so badly lately, so what better than to make some milky-way ice cream bars? So, that’s just what I did!Β  Continue reading
