Fried Oyster Mushrooms

This is one of our new favorites, for sure! We had it twice just last week! I have no doubt in my mind that it’ll blow you away too! I used oyster mushrooms because they are the perfect shape and texture for a “fried chicken” copycat. They are big and hearty, but thin enough that they aren’t “mushroom-y”, if that makes sense. The breading is delicious and crunchy and just to die for!

Vegan Hushpuppies

I am going to be honest… this is a recipe that I usually would just whip up on a limb and it always turned out great. When we I decided to make it a recipe and measured everything, it seemed impossible to get just right. Isn’t it funny how life works that way? I honestly figured this would be one of the simplest and quicker recipes, but turned out to give me more trouble than I’m sure hush puppies are typically worth. But after making a million horrendous batches (after never having a bad batch before that), I couldn’t give up. Dairy-Free Whipped Cream

This is probably the easiest recipe to date. Just 3 ingredients and about 5 minutes and you have yourself some homemade, delicious, dairy-free whipped cream! This stuff is SO GOOD and easy that I made enough for all the desserts (15 cans of coconut milk worth!) last Thanksgiving and I had to make more for leftovers!

Yes, you can buy coconut whipped cream from the store, but you’re going to pay for it and truthfully… you won’t be saving much time either because this is SO EASY! Continue reading

Ultimate Vegan Banana Bread

Not to toot my own horn here, but I have never in my life had a banana bread this good! I have worked and worked on this recipe to have it just perfect and I have no doubt that I have accomplished just that! You will not be disappointed! Vegan Cornbread

I will start this by saying that this is not sweet cornbread. Will does not like sweet cornbread, and would probably prefer if I didn’t add any sugar to it, BUT you can easily just add an extra tbsp or 2 to make it that southern, sweet, cornbread, if that’s what you like. The extra sugar won’t hurt anything and the cornbread will come out the same, except sweeter!
On that note though, this has been my staple cornbread recipe for a while now. I never measured anything before I decided I just had to share this recipe for the world. So, I made an excuse to make these with dinner so I could get all the measurements, just for you!  Continue reading

Loaded Vegan Sausage Biscuits and Gravy

If you’re from the south, you likely love sausage gravy, over some delicious buttermilk biscuits. If you’ve ever been to a Huddle House, maybe you’ve even had their loaded biscuits, which are quite similar to these… except these are vegan (and possibly even yummier)!
