Simple Vegan Ramen

Ramen, for anyone who lives under a rock, is a noodle soup that is a very popular around the world, but most known as a Chinese or Japanese dish. It is so delicious, and although they sell 20 cent prepackaged packs of them at most grocery stores, those don’t even come close to the real thing! My Simple Vegan Ramen recipe is so easy, but also full of flavor and yummy vegetables that you may never be satisfied with the prepackaged ones any longer!

To begin, prepare your vegetables. Carrots thinly sliced. A vegetable peeler works perfectly for this. Mushrooms sliced, green onions chopped, and garlic minced. Then, in a medium sauce pan heat the olive and sesame oil over medium heat. Once hot, add in the carrots, garlic, and mushrooms and sautee for about 3 minutes, or until the garlic is fragrant, but not browned. Add in the green onions, soy sauce, and ground ginger and sautee for another 1-2 minutes. Add the water and Vegetable Better Than Bullion and stir until the bullion paste has dissolved. Turn heat up and bring to a boil.

Once boiling, add your noodles and cook for 5-7 minutes, or per package instructions, stirring occasionally. Make sure your noodles are vegan, as some use milk or eggs in them. I used the Simply Asia brand of Japanese Style Ramen Noodles. Remove from heat, top with fresh green onions, serve, and ENJOY!

Simple Vegan Ramen

Cook time: 10 minutes
Servings: 4

Ingredients:
  • 1/2 tbsp olive oil
  • 1/2 tbsp sesame oil
  • 4 garlic cloves – minced
  • 1/2 cup thinly sliced carrots
  • 2 cup sliced mushrooms
  • 1/3 cup chopped green onions (+ more for topping)
  • 2 tbsp soy sauce
  • 1/2 tsp ground ginger
  • 6 cups water
  • 1/2 tbsp Vegetable Better Than Bullion paste
  • 8 oz vegan Ramen Noodles
Steps:
  1. Prepare vegetables by slicing and chopping as needed.
  2. In a medium saucr pan, heat oils over medium heat. Once hot, add in the garlic, garlic, and mushrooms. Sautee for about 3 minutes, or until the garlic is fragrant.
  3. Add the green onions, soy sauce, and ginger and sautee for another 1-2 minutes.
  4. Pour in the water, then mix in the Better Than Bullion paste until completely dissolved. Turn heat up and bring to a boil.
  5. Add in the noodles and cook for 5-7 minutes, or per package instructions.
  6. Remove from heat, tip with fresh green onions, and serve!
