Cheesy VEGAN Baked Mac&Cheese

On the theme of Thanksgiving meals, we need a good ol’ Cheesy VEGAN Baked Mac&Cheese recipe! This has been a little bit of a struggle since we’ve gone vegan. The first few Thanksgivings we brought the macaroni, and it was okay, but not like traditional baked macaroni and cheese. This is IT! So cheesy and delightful!

It’s a rather simple recipe as well, which is only a bonus. Like the the Vegan Green Bean Casserole recipe, this is a large batch. You can half the recipe if you’re just making a side dish for a few people, but in Thanksgiving fashion, we’re making a good 10 servings today!

To begin, Preheat your oven to 375Β°F. Cook your pasta noodles according to the package instructions. Drain and set aside. While the noodles are cooking, make the cheese sauce. In a medium sauce pan, add the vegan butter and non dairy milk and warm it over medium high heat until the butter has completely melted. Then pour in 1 1/2 bags of the non dairy cheese. I used Violife cheese, but use whichever is your favorite! Mix in the cheese and whisk often for about 10-15 minutes, or until the cheese is fully melted and you have a cheesy sauce.

Now, in a large mixing bowl combine your cooked noodles and cheese sauce and stir until well combined. Pour into a 9×13 baking dish. Sprinke the top of the macaroni with the rest of the vegan cheese. Cover with aluminum foil, and bake for about 20 minutes. Remove the aluminum foil and bake for another 15 minutes.

Let the Baked VEGAN Mac&Cheese rest for at least 15 minutes before serving. This helps the cheese sauce settle and thicken to make the ultimate yummy-ness! Top with a little salt and pepper, if you’d like. Serve warm and ENJOY!

Cheesy VEGAN Baked Mac&Cheese

Prep time: 15 minutes
Bake time: 35 minutes
Servings: 10

Ingredients:
  • 3 cups elbow noodles
  • 3 tbsp vegan butter
  • 1 cup non-dairy milk
  • 2 8 oz bags vegan cheese
Steps:
  1. Preheat oven to 375Β°F.
  2. In a large pot, bring water to a boil and cook the pasta noodles according to the package instructions. Drain and set aside.
  3. While the noodles are cooking, add the butter and milk in a medium sauce pan and warm over medium heat until the butter has fully melted.
  4. Add 1 1/2 of the bags of cheese into a the sauce pan. Whisk often until the cheesy has fully melted and you have a yummy cheese sauce.
  5. In a large bowl, mix your cooked noodles and cheese sauce together. Pour into a 9×13 baking dish. Cover the top of the macaroni with the remaining vegan cheese and cover with aluminum foil. Bake for 20 minutes.
  6. Remove the aluminum foil and return to the oven for another 15 minutes.
  7. Take the Baked Vegan Mac&Cheese out of the oven and let cool for at least 15 minutes before serving. Top with salt and pepper, if you desire.
