Pumpkin Chocolate Chip Cookies – Vegan

I thought of this idea when I had left over pumpkin puree left over from my Pumpkin Bread recipe and a bag of Enjoy Life chocolate chips. These Pumpkin Chocolate Chip Cookies have the perfect amount of pumpkin flavor and the chocolate chips compliment it so well. What better way to start September than with a good ol’ cookie recipe that incorporates pumpkin!?

To begin, preheat oven to 350ºF. Simply add the dry ingredients (flour, sugar, brown sugar, cinnamon, pumpkin pie spice, salt, baking powder, and baking soda) into one bowl and the wet (pumpkin puree, oil, applesauce, and vanilla) into another. Mix both of them well, then combine them together until you have a good sticky, pumpkin, cookie dough. You could just leave them like this and make pumpkin cookies and they’d be delicious alone, but if you really want to be fancy, fold in the chocolate chips.

**The best part about this recipe, is you can make the cookies either flat and chewy or puffy and soft bakery- style cookies, or somewhere in the middle… whichever you prefer! It all depends on how much baking powder you use. For flat cookies, use 1 tsp of baking powder, for fluffy, use 2 tsp, or for a good middle… use 1 1/2 tsp. Easy as pie Pumpkin Chocolate Chip Cookies!

At this point you have your cookie dough. Now cover the bottom of your baking pan with parchment paper and scoop your cookies onto the sheet. Leave a little room between them for them to spread out a little. Bake for 10-15 minutes. Remove from the oven and allow to cook for at least 10 minutes before serving.

Pumpkin Chocolate Chip Cookies – Vegan

Cook time: 10-15 minutes
Servings: ~ 24 cookies

  • 2 cups all purpose flour
  • 1/3 cup sugar
  • 1/3 cup brown sugar – packed
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1-2 tsp baking powder *see note above
  • 1 tsp baking soda
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 1/4 cup applesauce
  • 1 tsp vanilla extract
  • 1 cup vegan chocolate chips
  1. Preheat the oven to 350ºF.
  2. In a large mixing bowl, add the flour, sugar, brown sugar, cinnamon, pumpkin pie spice, salt, baking powder, and baking soda and mix well.
  3. In a medium mixing bowl, add the pumpkin puree, oil, applesauce, and vanilla and mix well.
  4. Pour the wet ingredients into the large bowl of dry ingredients and stir until well combined and resembles cookie dough.
  5. Fold in the chocolate chips.
  6. Lay parchment paper on your baking pan(s) and scoop cookie dough onto pan, leaving about an inch between each cookie.
  7. Bake for 10-15 minutes, or until a toothpick inserted comes out clean.
  8. Let cookies cool for at least 10 minutes before serving
