Easy Strawberry Jam! – No Pectin

Will eats peanut butter and jelly sandwiches like they are going out of style and I don’t like all the fillers and weird ingredients in the store bought ones, so I make them at home! So easy and you know what you’re putting in your body. I make batches of this jelly about once a week and it only takes 3 simple ingredients, and some of your time.

The amounts you use are totally up to you and you can adjust the amounts accordingly. On my IG and Facebook posts, I used 2 cups of strawberries, because it’s what I had at the time, but I’m going to double it here. That makes closer to the amount you’d buy from the grocery store.

First,

cut the tops off your strawberries, then chop them into smaller pieces. I usually cut them in half. then in half again, then in half a third time. You’re going to mash them a bit during the cooking process, so size isn’t super important; just prevents huge clumps in your jam. Measure out your sugar, which should be half the amount of cups you have of strawberries (4 cups strawberries = 2 cups sugar), and lemon juice. The lemon juice isn’t there for flavor and is essential in binding the jam together, so don’t forget to add it!

All you have to do now is combine it all in a saucepan, heat it over medium-low to medium heat and bring it to a low simmer. Let it continue to simmer for an hour and a half, stirring occasionally. Make sure to scrap the sides too. After about an hour, start pressing down on the bits of strawberries and breaking them up when you stir.

Once the jam is broken down and completely cooked, pour let cool. You can transfer it into a heat resistant container or let he sit in the pan. Once completely cooled, ENJOY! If you’d rather have more of a jelly than jam consistency, throw it in a blender while it’s still warm. Keeps in the fridge up to 2 weeks!

Easy Strawberry Jam

Ingredients
  • 4 cups cut strawberries
  • 2 cups cane sugar
  • 3 tbsp lemon juice
Steps
  1. In a saucepan, over medium- medium low heat, add all the ingredients and mix well.
  2. Bring to a light simmer and let continue simmering for 1 1/2 hours, stirring occasionally, making sure to scrape the sides.
    During the last half hour, push down on the strawberries using a spatula or a fork to help break them down a little more.
  3. Let cool completely and ENJOY!
