Amazing Vegan Berry Cobbler

I have two other recipes that I had planned to go up before this one, but I can’t stand it any longer and HAD to get this easy and Amazing Vegan Berry Cobbler recipe out ASAP! It deserves to see the world and you deserve to try it!

My brother-in-law has a backyard full of fruits and vegetables growing and gave us some fresh berries. From the second I got my hands on them, my mind went immediately to cobbler! So, here we are!

To begin, Preheat the oven to 350°F. Put the blueberries, blackberries, and strawberries in a medium mixing bowl. Add a little lemon juice and 1/2 cup of sugar and toss the fruit until well coated. Set them aside while you make the batter, or at least 15 minutes. The longer you let it sit, the thicker the “sauce” will be, and it really aids in holding the cobbler and fruit together.

In a large mixing bowl, mix in the flour, 1/3 cup of sugar, salt, baking powder, and baking soda. Cut in the butter until the batter is crumbly and there is no completely dry flour. You can use a pastry cutter, a fork, or even your hands to do this.

All you need to do after that is mix in the non dairy milk until its well combined and resembles a sticky dough.

In a an 8×10 baking dish, drop about 8 tablespoons of batter into the bottom of the pan. (I like to put a piece of parchment paper at the bottom of the pan first. This just helps make it less messy to clean the pan later, but will cook just fine without.) Next pour in the berries as evenly as possible. Use a spatula and really get all the juices out of the bowl and into the cobbler. After that, spoon in the rest of the batter over the top.

Put it in the oven and let bake for 30-40 minutes, or until the top has begun browning. Remove from the oven and allow to cool at least 10 minutes. Serve and ENJOY!

Amazing Vegan Berry Cobbler

Ingredients:

  • 1/2 cup fresh blueberries
  • 1 cup fresh blackberries
  • 1 1/2 cup fresh strawberries, cut
  • 1/2 cup sugar + 1/3 cup sugar, separated
  • 1 tbsp lemon juice
  • 2 cups all purpose flour
  • 1/2 tsp salt
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 scant cup vegan butter
  • 1/3 cup non dairy milk

Steps:

  1. Preheat oven to 350 °F
  2. In a medium bowl, mix in the berries, 1/2 cup of sugar, and lemon juice and set aside for at least 15 minutes.
  3. Combine the flour, 1/3 cup of sugar, salt, baking powder and baking soda in a larger mixing bowl.
  4. Cut the butter into the dry ingredient mixture until batter is crumbly. Add the non dairy milk and mix well combined and batter is sticky.
  5. Scoop in about 8 tablespoons of the batter into the bottom of a 8×10 baking dish.
  6. Pour the berry mixture evenly over the scoops of batter
  7. Scoop the rest of the batter over the top of the berries, then bake for 30-40 minutes, or until the top has begun to brown.
