Potato Bacon

The most annoying comment I get about veganism is by far “BUT BACON”. As if the taste of fried pig carcass should be more important than a sentient beings life, especially to a vegan. *major eye roll* The good news is that, just like I have stated a billion times before, there is a cruelty free option to everything, even bacon! I’ve tried a lot of them, but this potato bacon is definitely the closest in resemblance; and it’s so easy! It is flavorful, crispy, and chewy, just like the bacon you grew up eating, but without the cholesterol, torture, and slaughter!

Ultimate Vegan Fried Rice

A couple of years ago for Mothers Day I asked to go to Atlanta to a full vegan restaurant that I had been hearing about. To make a long story short, we sat there with a toddler and 5 month old for an hour and a half while people came in, got and ate their food, and we only got hot water. Of course we asked what was going on and were told a simple “I don’t know”. After a while, we left and I was in full fledged tears because it was now 6:30pm on Mother’s Day and I knew it’d be impossible to get in somewhere else. Not to mention, I had a cranky baby and a hungry toddler as well. We googled and found a close vegetarian Chinese restaurant and gunned it there; where this Ultimate Vegan Fried Rice was inspired from!

Flavorful Vegan “Clam” Chowder

Fun fact : I’ve never actually had clam chowder, so when Will requested for me to make an Flavorful Vegan “Clam” Chowder one day, I wasn’t sure how I’d pull it off, but I was determined. Of course I’m not going to go eat clam chowder in the name of science, so I looked at some recipes for clam chowder and read reviews, then made a few different batches for the family to get an idea on how it needed to taste. You’re going to have to trust them that it taste like it should, but I can at the very least attest that it is DELICIOUS!

Mini Tofu Pot Pies – Vegan

I will start off with an honest and embarrassing story. I made these Mini Tofu Pot Pies with pre-made pie crust several times before I noticed the lard in it! I had quickly checked the ingredients, no eggs or dairy, and got it. Never did I ever even think they would have lard in pie crust (obviously)!
I only mention it, partly, so you don’t make the same mistake, but mostly to let you know that even after 3 years as a vegan, I still make mistakes sometimes (like the other time when i bought frozen french fries with cows milk as the last ingredient *major eye roll*). You can’t let mistakes hold you back from your passion and purpose is my life lesson for you today 🙂

So, Lets talk B12…

So, let’s talk B12…
I always say that there isn’t anything we need that we can’t get from plants… and that’s not entirely true. Vitamin B12 is a big deal in the vegan community. Not only because of the serious risks that come with being deficient, but the only reliable source of it is foods or drinks that are fortified with the vitamin, supplements, or animal products. That’s right, either supplement or eat animals, right? That’s proof that being vegan isn’t sustainable or natural! Well, not exactly…..

Vegan “Scallop” Alfredo Recipe

The inspiration for this Vegan “Scallop” Alfredo recipe if from the first time I ever tried scallops several years ago, at Olive Garden. My usual was the Shrimp Alfredo, but my husband had convinced me add the scallops this time. I must have been feeling adventurous, because I am someone who always orders what she knows she likes every. single. time.
